Vegan Coconut Caramel

One of my favorite fall flavors is Caramel anything. It’s that burnt sugary sweetness that pairs so damn well with anything smoky or salty or a little bit tart.

So good.

But here’s the rub: I can’t eat dairy anymore. So I was feeling a little bit left out of the caramel fun.

Until I found an intriguing recipe for vegan caramel.

On Pinterest. Duh.

This vegan caramel only has two main ingredients, and two additional ingredients if you want to get super fancy. Depending on your proximity to a good Whole Foods or Asian market, you might have to put off making this for two days until Amazon Prime delivers one crucial ingredient. But it’s worth the wait.

  1. In a heavy-bottomed saucepan, combine coconut sugar paste and coconut milk, using as much of the coconut fat as you can.
  2. Stir the coconut sugar paste into the cream over low heat until all the paste is dissolved. Add the salt and stir.
  3. Boil over VERY low heat for 10-15 minutes. Be sure to keep the mixture from boiling over!
  4. Take the caramel off the heat, and stir in your vanilla. I used a fair amount of vanilla because I wanted that aromatic quality in my caramel.
  5. CAREFULLY transfer to a heat-proof glass jar or container, cover, and fridge for an hour until the caramel hits your desired consistency. If it gets too hard, you can always nuke it back to pourable consistency.
