I have a neat job: I work for a lifestyle and wine critic who gets lots of goodies sent to him for inclusion in his editorial.
This includes a ton of free wine, but better yet: books.
This has been my most recent favorite:
The Gourmet Vegetarian Slow Cooker by Lynn Alley from Ten Speed Press
I’ve been a vegetarian for about eight years now. My mom’s a vegetarian, her sister’s a vegetarian, my sister’s almost a vegetarian. It runs in the family. My boss, however, is decidedly NOT a vegetarian, and actually openly teases/mocks me for my eating choices.
So, I don’t think he’ll mind that I nicked Lynn Alley’s awesome book.
My boyfriend is from Texas. My boyfriend works from home. My boyfriend makes a recipe from this book for dinner about once a week. My boyfriend makes me very, very happy!
Alley travels the world for great entrees, and she’s got a segment for India, the Middle East, Greece, Italy, Mexico/Southwest, and probably a few I’m forgetting. So far, we’ve made a few of the Indian-themed recipes, Greek gigantes, and my favorite: Japanese braised tofu. It’s beyond delicious. And honestly, the cooking requires little prep work and two dishes, if you count the cooker insert.
If you want to eat healthy and you want it to be easy, you MUST purchase this book!
I came home to a lovely surprise– my own dinner of Japanese braised tofu. Here’s a peek:
