Peanut Butter Brownies

You know how when you read fashion magazines, they tell you how to “dress up” a basic dress with a kicky belt?

These are dressed-up brownies for sure.

You see in the photo above, there’s a shadowy figure in the background of my brownie photo.  That would be my fiance going back for thirds of these brownies.  And the twist?

Just a healthy layer of peanut butter frosting. (I use the world “healthy” to mean “robust” not actually “good for you.” If someone can make a frosting that’s actually good for you– let me know! I want to make it!)

I guess there are a few ways to make peanut butter brownies. But the frosting is SO easy to make– this was the easiest way for me!

  • 1/2 cup peanut butter
  • 2 tablespoons butter
  • 2 tsp vanilla extract
  • 1 1/4 cup powdered sugar
  1. With a hand mixer or a stand mixer with a whisk attachment, mix together the peanut butter, butter, and vanilla extract until fluffy.
  2. Slowly add the powdered sugar until combined.  Continue whipping until the frosting is of the desired consistency.
Yes, I did just slather this stuff on some box brownies.  Is it cheating? Probably.  Or I’m just like kooky Sandra Lee.  See here for the boozy aspect.

Nope.  Nope it doesn’t.
(Or you could try the rocky road brownies.  Or the brownies with spiced icing. Or the Chardonnay blondies if you don’t feel like chocolate.)
