Earl Grey Syrup & Sparkling Sweet Tea

David teases me, that I make iced tea like a Yankee. Boil water, brew tea, put in fridge, serve with lemon. Apparently, Texans scoff at hot brewed tea that’s been chilled.  You have to cold brew it, then chill it, and stir in sugar, too.  Sweet tea is the place to be. So, I decided to try a different method to make some sweet tea.

Early Grey Syrup

  • 2 cups strongly brewed Earl Grey Tea
  • 1 cup sugar
  1. Boil the tea and sugar until reduced by half
  2. Cool completely
  3. Store in an airtight container for a few days

And here’s what I did with it: Sparkling Sweet Tea: Add 1/4 cup Earl Grey Syrup to a tall glass… Add some cubies… Top with club soda or seltzer… Stir and enjoy! It’s refreshing, light, and best of all– sweet!

    Rest assured no Texan in their right mind would attempt to make cold brewed sweet tea. The two methods don’t mix. Your sugar would sink to the bottom of the pitcher. In fact, I’m not sure where David learned about cold brewing methods…because that is absolutely not how we were taught to make tea growing up {at least I wasn’t}. Don’t let him fool you!
